The story behind the snack.

Banana peppers were never a fresh ingredient in my go-to grab at the grocery store. How am I 30 years old and only just learning about these? I knew them as the hot pepper rings in a tall glass jar that I’d put on an Italian sandwich or in a salad. They are mostly sweet with a hint of spice on the back of the tongue. However, every once in a while, you may get a hot one but typically they are mild.

I had stocked up on the banana peppers and looking for a new way to use them. After peaking in the fridge and sorting through some leftovers I found myself with leftover baked sweet potatoes, a half pound of bacon and a bunch of fresh banana peppers. The Bacon Wrapped Banana Peppers Stuffed with Sweet Potato recipe was born!

The details of the recipe are simple and we all need more simple recipes in our lives. Amiright? First, start by cutting the peppers in half and removing the seeds. Next, wash your hands to remove any pepper oils from your hands. Stuff each half with 1-2 tablespoons of baked sweet potato and wrap them with bacon. Sprinkle each with smoked paprika and toss them on the grill.

Most importantly, twenty to twenty-five minutes later you’ll have a yummy sweet, salty and spicy snack hot of the grill. Bacon Wrapped Banana Peppers Stuffed with Sweet Potatoes are as simple as that!

Ingredients

  • 6 banana pepper, sliced in half and seeds removed
  • 2 cups mashed sweet potatoes
  • 1 pound bacon
  • 1 teaspoon smoked paprika

Instructions

  1. Preheat the Traeger Grill (or oven) to 350°F.
  2. While the grill is preheating stuff the peppers with mashed sweet potatoes, about 2-3 tablespoons of sweet potato.
  3. Wrap each stuffed pepper with bacon, using toothpicks as needed to secure the strips of bacon. Sprinkle with smoked paprika.
  4. Place the stuffed peppers directly on the grill grates and roast for 20-25 minutes until the bacon is fully cooked. 

Notes

If you're making these in the oven, place the stuffed peppers on a wire rack above a baking sheet to catch the bacon drippings.
