Spiced Dutch Baby

This Spiced Dutch Baby with Apple Cider Glazed Pears is like a giant, fluffy pancake. There are a million things you could top this poufy perfection with, but the Apple Cider Pears I used in this recipe make for the most delicious and comforting weekend brunch. Dust your Dutch Baby with powdered sugar and you’re good to go!

The grocery list.

If you want your Dutch Baby to get that nice pouf, make sure all of your cold ingredients are at room temperature when they’re added to the recipe. Do this by leaving them on your kitchen counter for 10-15 minutes before combining the ingredients.

  • Salted butter – You can use unsalted butter if you would prefer to do so, but I like using salted butter in sweet recipes to make the other flavors in the dish pop!
  • Whole milk – Feel free to use any non-dairy milk as a substitute for whole milk.
  • Eggs – Blending the eggs whips air into them and allows the Spiced Dutch Baby to puff up.
  • Vanilla extract – You may not think vanilla extract adds much to a recipe, but it elevates flavor a TON!
  • Granulated sugar – This recipe is made with sugar and spice and everything nice!
  • All-purpose flour
  • Cardamom – Cardamom is a totally underrated spice, it has a powerful flavor and is perfect for fall dishes.
  • Cinnamon – I can’t get enough cinnamon this fall!
  • Pears – Pear season is coming to an end, so this recipe is perfect for enjoying the last of your pears.
  • Apple cider – I like the slight tartness the apple cider adds to the pears when you cook them together.
  • Powdered sugar – For sprinkling over your Spiced Dutch baby.

The preparation.

Make the Dutch Baby.

Preheat the oven to 450°F. 

While the oven preheats, make the batter. Place 2 tablespoons of butter in a small bowl and microwave in 15 second intervals until melted. Allow the butter to cool slightly. Add the milk, eggs, vanilla extract, granulated sugar, all-purpose flour, cardamom and cinnamon to a blender. Blitz for one minutes. With the blender running, slowly pour the melted butter into the batter. Blitz until fully combined. Let the batter stand for 10 minutes.

While the batter sets and once the oven is heated to temp, place a large 12” cast iron skillet in the oven for 10 minutes to get it screaming hot. At the ten minute mark, add the 3 tablespoons of butter to the hot cast iron skillet to melt, leave it in the oven for an additional 1-2 minutes. 

Remove the heated cast iron, pour the batter into the center and quickly return to the oven. Bake for 20-25 minutes or until puffed and golden. Resist the urge to open the oven door as it may deflate your Dutch Baby!

Make the apple cider pears.

While the Dutch Baby bakes, make the apple cider pears. To a small skillet, add remaining 3 tablespoons of butter. Once melted add the pears, cook for 1-2 minutes. Lastly, add the apple cider and bring to a boil for 1-2 minutes until slightly reduced. Remove from the heat and set aside until ready to serve.

When the Dutch Baby has finished baking, remove the cast iron from the oven. Allow it to cool slightly and sprinkle it with powdered sugar. If you add the powered sugar to a hot Dutch Baby, the sugar will melt into its surface. Top with the cider pears and serve.

If you’ve never had a Dutch Baby before, it’s a German pancake that’s made it a cast iron pan in the oven. It contains no rising agent like baking powder, so what gives it that perfect pouf? The air whipped into the eggs when the ingredients are blended plus the really hot cast iron pan and steam from the oven will make this pancake puff up beautifully.

This Spiced Dutch Baby is topped with Apple Cider Pears, perfect for fall. However, a Dutch Baby can be eaten for breakfast, lunch or dinner and can be paired with an endless number of toppings. Any fruit will taste amazing, maybe add a squeeze of lemon juice if you want to get fancy! Personally, I recommend topping your Dutch Baby with some Fix & Fogg peanut butter (there are tons of flavors and all of them would taste amazing)!
