Cutting into the Berry Bursting Angel’s Food Cake reveals a delicious surprise: a mound of fresh berries as colorful as Fourth of July fireworks. Ok, maybe it’s not much of a surprise since the name “Berry Bursting” hints at it, but it’s still an exciting reveal! Angel’s food cake is a perfect cake for the summer; it’s so light and fluffy. Paired with seasonal berries, it is the ultimate dessert. This fun, colorful cake is what every Fourth of July party absolutely needs.
The grocery list.
- Fresh strawberries, blueberries, blackberries and raspberries- As made obvious by the name of this dessert, the bursting berries are the star of the show. The fresh fruit in this cake is so refreshing and delicious!
- Cool whip – Everyone at some point in their childhood (or maybe adulthood, I don’t judge) has eaten cool whip straight out of the container. If you don’t want to use store bought cool whip, homemade whipped cream is a good substitution (whip together heavy cream, powdered sugar, and vanilla extract until stiff peaks form). However, store bought whipped cream isn’t a good substitution because it’s not thick like cool whip or whipped cream made from scratch.
- Freeze dried berries – For decoration on top of your cake try a mix of strawberries, blueberries and raspberries.
The preparation.
With a combination of store-bought and fresh ingredients, this cake is super simple. It’s filled (literally) with fresh summer fruits and it’s light and airy. That combo makes it the ideal summer dessert to prepare AND to eat. With only a few simple steps and options for make-ahead, if you find yourself in a pinch, this is the recipe to turn to!
The cake.
For this recipe, I chose to use a store bought cake. Angel’s food cake is such a simple cake, usually you can find decent quality ones in the bakery section of your grocery store. However, if you would prefer to make the cake from scratch, go for it! If you choose to do this, let the cake cool completely before putting berries in the center of the cake and frosting the cake. Also, make sure you use a proper angel’s food cake pan that will create a hole in the middle for the berries to reside.
The bursting berries.
Wash and slice your fruit. Make sure you dry it well. In a medium bowl, combine the fresh sliced strawberries, blackberries, blueberries, and half of the raspberries. Set aside.
The frosting.
In the bowl of a stand mixer, combine the cool whip and the remaining raspberries by whipping on medium speed for about 1 minute, or until the raspberries are evenly distributed.
Assembling the cake.
Place the angel’s food cake on the dish you plan on serving it on. Once you assemble it, if you try to transfer it onto a different dish, all of the berries will fall out from the bottom! Fill the center of the cake with half to two-thirds of the fresh berries. The rest will go on top of the cake.
Frost the cake with the raspberry cool whip mixture. Make sure to cover the sides and top evenly.
Decorate the cake with the rest of the fresh berries, along with the freeze dried berries. Store this cake in the fridge until you’re ready to serve it, possibly at a cookout or party!
Make ahead options.
First, to make this recipe as quick and easy as possible, I’d recommend buying a premade angel’s food cake. They’re usually of good quality, most grocer’s carry angel’s food cakes in their bakery section. Next, the most time-consuming part of this recipe is cutting up the fruit. Also, you can wash and cut up your fruit ahead of time. You could always recruit someone from your household to be your sous chef for the day and have them cut up the berries! Lastly, you could combine the raspberries and cool whip ahead of time and store it in the fridge until you’re ready to frost your cake.
