We love a hearty chunky guacamole and this 5-Minute Mango Guacamole is on repeat at our house. Not only is this great served simply with lightly salted tortilla chips (the scoops are the best to shovel this into your mouth!) but also as a side dish. Make your shredded chicken tacos POP with bites of sweet mango and creamy avocado or liven up grilled shrimp.

Hearty, flavorful and fresh mango guacamole

We’ve been Looking for some freshness these days. During my last run to the store the pile of mangos caught my eye. We eat a TON of dried mango in our house, it’s the perfect sweet treat. I was excited to bring mango into a dish and enjoy it in a spicy and savory way. We are big on spice so you know all the jalapeño seeds made it into this guac but fair-tongued-friends beware! You may deseed the jalapeños before dicing and adding to your mix if spice is not as kind to you. Your kitchen, your rules!

Ingredients

  • 1/4 cup red onion, minced
  • 1 jalapeno, minced
  • 2 ripe mangos, diced
  • 1 ripe avocado, diced
  • Juice of 1 lime
  • Pinch flakey salt
  • 1/4 cup cilantro

Instructions

  1. Once everything is minced and diced simply toss together in a medium bowl.
  2. Taste and add additional salt / lime juice as needed.
  3. Serve on top of chipotle chicken or grilled shrimp or with lightly salted tortillas chips.
