Ingredients

  • 1 cup old fashion rolled oats
  • 1 1/2 cup coconut milk
  • 2 ripe bananas, mashed
  • 1/4 cup plain greek yogurt
  • 2 tablespoons maple syrup
  • 1 tablespoon chia seeds
  • 2 teaspoons vanilla
  • 1/4 teaspoon kosher salt

Instructions

  1. In a large bowl, stir the oats, milk, bananas, yogurt, maple syrup, chia seeds, vanilla and salt.
  2. Divide between 4-6 mason jars. Cover and refrigerate 4 hours, ideally overnight.
  3. In the morning, stir and top with fruit (sliced bananas, strawberries or fresh jam), nuts / nut butters, maple syrup, granola etc. the possibilities are endless!

Lewix, I usually keep these about 5-6 days (not that they ever last that long before they’re eaten up!).

Sara- feel free to use any milk you favor. We like coconut milk but I’ve also used whole milk and vanilla almond milk in this recipe with great results.

Barry, roughly 90g of oats. I would double check this but I did some internet searching and that’s a common equivalent.

Hey, Sammy! Quick question about the milk options. Due to allergies in the household, we can really only do Oat milk. Will this be too redundant & flavorless? Should we maybe kick up a notch of other ingredients to add some more flavor? Thanks!

Samantha, not at all redundant! The flavor comes mostly from the PB&J anyways so I think this is a great sub to make it work for your house. — Sammy
