- 16 large eggs
- 2 cups leftover meatloaf, crumbled
- 2 cups leftover roasted potatoes
- 2 cups fresh asparagus
- Salt + pepper to taste
- Mix all the ingredients together in a greased 9x13 pan.
- Bake in the oven at 350°F for 40-50 minutes or until the center is set and no longer jiggles.
- Cool for 5 minutes before slicing.
- Serve topped with avocado or drizzle with hot sauce, or both!
