The grocery list.

Cake batter.

  • Butter – This cake is deliciously buttery and moist!
  • Brown sugar – Brown sugar and its caramel flavor blends perfectly with the banana.
  • Granulated sugar – For some added sweetness.
  • Egg + Egg yolk – The additional egg yolk ads a richness in flavor and a smooth texture.
  • Bananas – Mash overripe bananas really thoroughly.
  • Buttermilk – Buttermilk adds a subtle but pleasant tang to this breakfast cake.
  •  All-purpose flour – Flour is the base of most baked goods.
  • Baking powder – Baking powder and soda are the leavening agents in this recipe, they allow the cake to rise.
  • Baking soda
  • Kosher salt – I always include a tiny bit of salt in my baking recipes. Some people prefer to leave it out, but I think it really enhances the other flavors of the baked good.

Streusel Topping

  • All-purpose flour – Flour forms the base for your crumbly streusal topping.
  • Brown sugar – Brown sugar adds a light caramel flavor.
  • Granulated sugar – Just some regular sugar.
  • Cinnamon – A coffee cake necessity.
  • Kosher salt – A little salt to elevate the flavors!
  • Unsalted butter – Melted butter is what forms the crumbles on top of your Banana Coffee Cake.

The preparation.

Preheat the oven to 350°F. 

In a large bowl, beat the soft butter, brown sugar and granulated sugar for about 2 minutes using a hand mixer. Add the eggs and yolk, beat for an additional 1 minute. Next, add the banana and buttermilk, beat until just combined. 

In a separate bowl mix the flour, baking powder, baking soda and salt. Pour the dry ingredients into the wet and mix until just combined using a silicone spatula. 

To make the streusel topping, mix the flour, brown sugar, granulated sugar, cinnamon and salt in a separate bowl. Pour the melted butter into the mixture and mix until no dry bits remain. Set aside.

To a parchment lined 9×5 loaf pan, add the banana bread batter. Top the loaf with the Streusel topping. 

Bake for 65-70 minutes until the loaf is set. If the top begins to brown before the loaf is set, tent a piece of aluminum foil over the top and continue to bake.

Remove from the oven and cool in the pan for 10 minutes. Using the parchment paper, pull the loaf out of the pan and finish cooling on a wire rack before slicing, about 30 minutes.

Notes

*I allow the parchment to hang about 2 inches over each side. Once the batter and streusel are laid in the pan, I pull the parchment to stand up to allow the cake to rise without loosing the topping.

**If the top begins to brown before the loaf is set, tent a piece of aluminum foil over the top and continue to bake.
