Cheesy Scramble with Bacon & Berries

This is how we start most of our mornings, with a big plate of Cheesy Scramble with Bacon & Berries. It gives you everything you want and need to start the day off on the right foot. Fluffy and cheesy eggs, crispy baked bacon, smooth ripe avocado and a ripe juicy fruit. Savory and salty with a touch of sweetness. Filling and satiating. Protein packed and hearty yet light enough to jumpstart the day and not weigh you down.

  1. Prepare the bacon by following these simple steps, CRISPY SHEET PAN BACON.
  2. Heat a non-stick-skillet over medium heat. Add the butter to the pan and allow it to melt.
  3. Crack the eggs into a medium bowl and whisk for 1 minutes until bubbly. Pour the eggs into the skillet and cook for 3-5 minutes, pushing around to scramble until just set. Add the cheese to the skillet and toss with the eggs to combine. Remove from the heat.
  4. To serve, divided the cheesy eggs among two plates. Add half an avocado to each plate and sprinkle with everything bagel seasoning. 
  5. To each plate, add 3 slices of crispy sheet pan bacon and a handful of blackberries and enjoy!
