This Brisket & Egg Bagel Sandwich is a DREAM breakfast. When the stars align and you have both fresh baked bagels and perfectly smoked brisket in the house, you can’t NOT make these breakfast sandos! Play your cards right and line this up for a weekend of cooking (and eating!). This hearty breakfast sandwich is made by combining two Feeding the Fraser’s family favorite recipes:

TRAEGER GRILLS SMOKED BRISKET

The perfect bagel for this breakfast sandwich.

I’m clearly a biased opinion here BUT I think the BOILED & BAKED EVERYTHING BAGELS are great for this recipe. The everything bagel seasoning is the perfect balance with pops of colorful, aromatic flavors, crunchy and textured bits throughout. If everything bagels don’t get your engines revving in the morning, I’d also suggest sesame, poppyseed, onion or garlic. Stick to savory bagel flavors for this breakfast sandwich.

What’s better than brisket?

Nothing. The answer is simple, nothing beats TRAEGER GRILLS SMOKED BRISKET on this egg bagel sandwich BUT I’m a realist, maybe you don’t have a spare 13 hours to smoke a brisket. It takes some planning and coordinating even for me, and cooking is my job! I call this recipe a “weekend recipe”. It’s the kind of recipe you plan to start on Friday knowing that Sunday morning breakfast / brunch with the family is going to be worth every bite. There are favorite recipes in our lives that are worth the time. It’s a chance to learn a new skill or technique. The reward is delicious food! What’s better than that? Again, nothing! If it’s not in the crds for you to smoke a brisket, try traditional breakfast meats like sausage patties or classic oven-baked bacon.

The grocery-list:

Olive oil — my go-to is Cobram Estates Olive Oil. I have visited the olive groves in California and I’ve witness the process of taking olives from tree to table. It’s so fresh, slightly spicy on your palate (from the anti-microbial components in the EVOO!) and tastes like grassy fresh green tomatoes. There is nothing better!

Fresh eggs — I always look for Certified Humane, pasture-raised eggs at the store. There are a LOT of buzz words associated with eggs and it can get confusing. Provolone cheese — any cheese will do but this is our go-to because it’s mild in flavor. There are a lot of bold flavors in one bite, aromatic spices on the bagel and smokey brisket inside, a mild flavored cheese is the perfect balance!

BOILED & BAKED EVERYTHING BAGELS — these bagels are the gold standard in our house but feel free to swap for the savory bagel of your choice.

Salted butter — there’s nothing like a little salted butter smeared on a lightly toasted bagel when it melts into all the pockets and crevices and pools into every bite.

TRAEGER GRILLS SMOKED BRISKET — it’s hard to make this Brisket & Egg Bagel Sandwich recipe without brisket BUT if you are looking for a swap I suggest breakfast sausage patties or oven-baked bacon.

Ingredients

1-2 tablespoons olive oil

4 large eggs

4 BOILED & BAKED EVERYTHING BAGELS 

2 tablespoons salted butter

4 slices provolone cheese

4 ounces TRAEGER GRILLS SMOKED BRISKET, warmed

Instructions

  1. Heat a non-stick or cast iron skillet over medium-high heat. Add the oil to the pan to heat. When the oil shimmers, add the eggs.**
  2. Cook to desired doneness, we like over medium which will give you cooked through whites and a set but runny yolk. 
  3. While the eggs cook, toast your bagel in the toaster.
  4. Remove the bagels from the toaster, smear with salted butter and place slice of provolone cheese on the bottom slice along with a slice of warmed brisket. Cover with the top of the bagel. The residual heat from the bagel and brisket will melt the cheese down.
  5. When the eggs have finished cooking, add one egg to each bagel and serve. 

Notes

** For crispy cooked edges you want to make sure the skillet is heated and the oil is hot. The egg should immediately start cooking when it hits the pan.
