Dinner in under 40 minutes? That’s what you get when you make this AirCrisp Greek Meatballs w/ Cucumber Salad recipe. How could you argue with that?! Your run of the mill meatballs that are meant to be paired with meat sauce are usually lacking in flavor. These Greek Meatballs, on the other hand, are quite the opposite. Since they’re the main event and there’s no strong sauce to hide behind, they need to compensate with TONS of flavor. These meatballs are filled with warm spices that contrast with the sharp, acidic cucumber salad and refreshing tatziki. Serve this three-part dish with some toasted pita bread and you’ll be in heaven!

Multiple methods for cooking Greek Meatballs.

The preparation is just about the same, you mix the meat, scoop and place on a parchment-lined baking sheet.

Preheat the oven to 450°F. Bake the meatballs on the tray for 25-30 minutes until full cooked and browned. Serve this dish with all the sides and sauces and enjoy it with some good company!

Ingredients

Meatballs

Cucumber Salad

  • 1 large English cucumber, cut into halve moons
  • 1 teaspoon kosher salt
  • 1/2 red onion, thinly sliced
  • 1/4 cup white wine vinegar
  • 2 teaspoons sugar
  • 2 tablespoons fresh dill

Tatziki Sauce

  • 1 cup cucumber, minced
  • 1 teaspoon kosher salt
  • 1 cup plain greek yogurt
  • 2 tablespoons lemon juice
  • 3 tablespoons fresh dill, minced

To serve

  • Garlic and Herb Naan Bread
  • Cooked rice or pilaf
  • Salad greens

 

Instructions

  1. Preheat the Ninja Foodie to 375°F on AirCrisp.
  2. In a stand mixer, combine all the ingredients for the meatballs and mix on low for 2-3 mins until combined.
  3. Using a cookie scoop, portion each meatball out and roll in between your palms. Place the meatballs on parchment-lined baking sheet.
  4. Working in batches cook the meatballs in the AirCrisp basket in a single layer for 8-11 minutes or until the internal temperature reaches 135°F*
  5. While the meatballs are crisping in the AirCrisp basket, prepare the remaining ingredients.
  6. To prep the cucumber salad, toss the sliced cucumbers in a large bowl with the kosher salt. Let stand for 2 minutes then mix the remaining ingredients; red onion, white win vinegar, sugar and dill. Cover and refrigerate until ready to serve.
  7. To prep the tatziki sauce, combine the minced cucumber with salt in a medium bowl. Let stand for 2 minutes then mix the remaining ingredients; greek yogurt, lemon juice and fresh dill. Cover and refrigerate until ready to serve.
  8. When the meatballs have finished cooking assemble your plate. Serve the meatballs with fresh garlic and herb naan bread or plate over a bed of salad greens. Serve with a side of cucumber salad and serve with a heap of tatziki sauce.

*135°F for beef. 165*F for turkey or chicken.
