Let's also talk about the star of this dish, the chimichurri. I would eat a leather boot if it were covered in this stuff. No better way to get an added dose of freshness than with a sauce of fresh herbs and yummmmmy EVOO.

I love these meatballs because they are PACKED with flavor. They also keep well in the fridge and are even yummy served chilled. I love a simple meal that comes together with ease but impresses your hungry guests. I can always tell by the various groans and grunts between bites that I've hit a home run. This is a go-to recipe for that lingering ground meat in the freezer, great to switch it up when you want something other than a burger or a Bolognese.

The day I tested this I’d gone to the store and got everything on my mental list. I got home and I realized I completely forgot a fresh pineapple 🤬. It was on my written list sitting in the kitchen island but never made it to my mental list. I went ahead and worked with what I had. This recipe was BOMB without the pineapple and I know it would have been even BOMBER with it. That’s life! Sometimes we have everything we need to make the perrrrfect meal and other times, it’s pretty perfect with what we have. I am looooving pork loin roast. It’s as if a pork loin, ate another pork loin. It’s the pork loin’s big brother. I’m not messing with the little pork loin anymore, the pork loin ROAST is here to stay!

I’m not a mayo-lover. I wouldn’t typically elect to have a dish where mayo is a star ingredient but it just WORKS with dill and salmon. Something about the fat on fat makes it addictive. The dill and parsley are strong enough herbs to overpower the in-your-face mayo flavor and it seems to calm down once baked. This was a simple crowd-feeder and pleaser.
