This is the happy accident of overflowing with pizza dough (I'm working on perfecting a dough recipe that I hope to share with you soon!). It's also an ideal recipe to tuck leftovers into. I bet you'll be smoking meats and grilling all weekend, save this recipe for Monday when you're looking to tuck leftover cheeses and cooked meats into something for an easy week night dinner. Grab yourself some store-bought pizza dough or use that trusty old recipe you've got stored away. This dish comes together quickly and is sure to please!

I made this whole roast chicken the other night and juuuuuust as it finished cooking, we lost power due to a crazy wind storm. The timing was perfect! That power outage had us doing things we never do.. taking pictures with a FLASH and eating by candlelight only. We might not have been able to see but boyyyyy was this dinner delishhhh. A simple peppercorn roast chicken does the trick. Top it off with some chimichurri and serve it with rice and steamed broccoli.

I always seem to have something in stock to pull together tacos I'm really relying on these easy meals these days. It's nice to step into the kitchen and just OWN THE MEAL. If you don't have a pressure cooker, you could also do this in a slow cooker. Quick or slow, it'll be worth the time and makes plenty of serving to last a few meals!
