Overnight Oats

Overnight Oats

We eat a LOT of oats in this house. You can’t go wrong with a warm bowl of porridge creamy oats. If you add warm sautéed cinnamon apples or caramelized bananas on top and it’s basically dessert for breakfast. With this summer heat creeping in I’m trying to keep the core temperature low and these overnight oats served COLD are the ticket. Get creative with your toppings! Pictured here with quick chia strawberry jam & granola.

Shrimp Ceviche

Shrimp Ceviche

There is nothing simpler and let's talk about FRESH. I love how bright this dish is. Full of flavor, a little kick from the jalapeño and a touch of sweetness from the mango. Is there anything else you could possibly want from a dish?! I think not!

Baked Banana Oatmeal

Baked Banana Oatmeal

My obsession with caramelized bananas continues. Start your weekend off the right way and whip up a pan of this BAKED BANANA OATMEAL w/ CARAMELIZED BANANAS. Your family will thank you!

Garlic Roast Bird w/ Charred Lemon Chimi + Charred Onions

Garlic Roast Bird w/ Charred Lemon Chimi + Charred Onions

This dish may look fancy but I promise even the most novice home-cook could whip this up. All the ingredients are tossed onto one sheet pan and cooked on the Traeger for that wood-fired flavor. Let's also talk about the star of this dish, the chimichurri. I would eat a leather boot if it were covered in this stuff. No better way to get an added dose of freshness than with a sauce of fresh herbs and yummmmmy EVOO.

Greek Meatballs

Greek Meatballs

I love these meatballs because they are PACKED with flavor. They also keep well in the fridge and are even yummy served chilled. I love a simple meal that comes together with ease but impresses your hungry guests. I can always tell by the various groans and grunts between bites that I've hit a home run. This is a go-to recipe for that lingering ground meat in the freezer, great to switch it up when you want something other than a burger or a Bolognese.
