Greek Meatballs

Greek Meatballs 

  • 2 lbs Ground (beef, chicken, pork, mix)
  • 1 onion, grated
  • 6 cloves minced garlic
  • 1 tsp ground pepper
  • 2 tsp salt
  • 2 tsp cumin
  • 2 tsp oregano
  • 1 tsp cinnamon
  • 1/2 cup parsley, minced
  • 2 eggs
  • 1 cup panko
  1. Preheat the oven to 400°F.
  2. In a stand mixer, combine all ingredients and mix on low for 3-4 mins until well combined.
  3. Using a small cookie scoop, portion each meatball out and roll in between palms to smooth. Space evenly on a parchment lined baking sheet. Bake for 25-30 mins. 
  4. Serve with rice or orzo, roasted asparagus, fresh tomatoes and a quick Tzatziki sauce. 

Tzatziki: mix 1/2 cup plain greek yogurt, 2 tsp fresh dill, 1/4 cup grated cucumber, 1/2 tsp za'atar seasoning and pinch of salt to taste.
