Fried Egg & Fig Toast
1 tablespoon olive oil
2 @peteandgerrys eggs
2 slices sourdough bread, toasted
4 tablespoons whipped ricotta
2-4 fresh figs, sliced
1 tablespoon honey
Basil for garnish
- In a medium frying pan, heat the olive oil over medium-high heat. When the oil begins to shimmer, crack one egg at a time into the pan. Fry the eggs for 3-4 minutes until the edges are crisp and the whites are set.
- Smear 2 tablespoons of whipped ricotta on each slice of sourdough toast. Top the ricotta with fresh figs and drizzle with honey. Serve the toast alongside a perfectly fried egg.
